Chef Alexandre Fabris
Originally from Burgundy–Franche-Comté, Chef Alexandre Fabris discovered his passion for gastronomy at an early age, in the kitchen of his family’s inn run by his grandmother. This first inspiration, filled with childhood memories, still inspire his creations today.
Trained by master Chefs such as Marc Meneau and Jacques Lameloise, he perfected his art in some of the most prestigious hotels of Corsica and the French Riviera. In 2019, his talent was rewarded with his first Michelin star in Calvi; a distinction he went on to maintain for five years in a renowned establishment in Saint-Tropez.
Deeply attached to the land and its rhythms, Chef Fabris draws his inspiration from the seasons and from the passionate producers and artisans who shape the soul of Provence. To him, they are the true keepers of the South’s culinary heritage.
A committed and generous chef, Alexandre Fabris defines himself as a passeur; a messenger between the product and the plate, between tradition and modernity, between generations. His cuisine, sincere and unpretentious, celebrates the purity of flavor and the living spirit of the terroir — where authenticity, emotion, and elegance come together in perfect harmony.
